I just got access to a duffalo bar, which I am very excited to use. Main thing I noticed today when moving is I can initiate the movement with the knees vs a hinge. On paper and based off how I have squatted previously would this elicit quad development?

If your knees are getting further forward (relative to bar path), then yes
