Water retention,maintenance calories range

Just some quick questions on water retention and maintenance calories
From your side what would be the reasons for retaining water expect sodium and how could it be solved?
And i would like to know if on the maintenance calories a range could be added(example soemone needs 3000 to maintain,can he eat a little more or less rather than straigth on 3000)
